Warm Lentil Salad (serves 4)
1 cup cooked lentils
3 Tbsp. extra virgin olive oil
1 Tbsp. red wine vinegar
1 clove garlic
1tsp. Dijon mustard
Salt, pepper, cumin to taste
Chopped fresh cilantro
Make vinaigrette by putting the garlic, Dijon mustard and red wine vinegar in a blender. Turn on and slowly pour in the extra virgin olive oil, season with salt, pepper, cumin and fresh cilantro. Toss with lentils and place to the side.
Pan-Seared Snapper with Citrus Sauce
4-7 oz. snapper steaks
½ cup dry white wine
1 each lemon, lime, orange (peel, remove segments, squeeze the juice and reserve)
4 oz. softened sweet butter
Fresh chopped parsley, chives, tarragon
Salt and pepper to taste
Season snapper. Pre-heat a heavy bottom sauté pan. Add enough olive oil to coat the pan. Sear the snapper on both sides and finish cooking. Remove the snapper and keep warm. Add the white wine and reduce by half. Add the 3 citrus juices and bring to a boil. Swirl in the butter and citrus segments, season with salt, pepper and fresh herbs. Warm lentils and plate the snapper.
